Here is one of my new favorites -- kale and zucchini pizza on a Udi's gluten-free crust. The kale that is exposed from the cheese gets a little crispy and crunchy almost like kale chips, while the closer to the center you get the more tender and soft the kale is. Using the two different cheeses gives an extra boost to the flavor.
So, when you are are harvesting tons of kale and zucchini from your garden, like I am, here is a perfect recipe to make a delightful and healthy dinner!
Kale and Zucchini Pizza

3 cups chopped kale {stems removed}
3/4 cup sliced zucchini
3 cloves garlic
1/2 cup tomato sauce
1/2 cup part-skim shredded mozzarella
1/4 cup freshly shredded parmesan
1 tablespoon olive oil
1 Udi's gluten free pizza crust {or your favorite pizza crust}

Preheat oven to 425 degrees, or if using a different crust follow their heating directions. Chop kale, thinly slice the zucchini and garlic.
Heat the olive oil in a pan. Add in the garlic. Cook for a minute making sure it doesn't burn. Lower the heat and add in the zucchini, sprinkle with salt and cover for two minutes. Flip over the zucchini slices and cook until they are just slightly translucent in the center, but still tender. Remove from the pan leaving the garlic behind.
Add the chopped kale into the pan with the garlic. Gently stir to coat the kale with the oil. Cover and cook until the kale begins to wilt. Remove from heat.
Evenly spread the tomato sauce on the crust. Arrange the zucchini on top of it in a single layer.
Pile the kale high on top of the zucchini.
Top with the mozzarella and parmesan and bake for 10-14 minutes, or until the cheese is melted and the crust us crispy.

Michelle, this is so much better than the standard pizza which is good but not up to par with the vegetable topping.
ReplyDeleteI don't have kale but I was planning a zucchini and ricotta pizza. You certainly have given me confidence to do it.
So, I'm not a huge kale fan. Just being honest. But, I think I would like it on pizza. Thanks so much for sharing at Must Try Monday.
