by Michelle Maskaly, The Adirondack Chick

1 cup tricolor quinoa {I use Trader Joe's}
2 cups vegetable broth
1 lime
1 lemon
1/2 cup chopped cilantro

Rinse the quinoa under cold water.

Add the quinoa and vegetable broth to a pot and bring to a boil. Simmer covered for 15-20 minutes or until liquid is absorbed. {If it's taking a while after the 15 minutes, raise he heat and stir until the broth is absorbed, making sure it doesn't burn.} Remove from heat for about 5 minutes.

In a separate bowl juice the lime and lemon. Add the quinoa and cilantro. Stir well and let sit.

Serve immediately, or reheat as needed.
